🛒 Ingredients

🧄 For the Dough:

  • 2 cups all-purpose flour (maida)

  • 4 tbsp oil or ghee

  • ½ tsp salt

  • Water (as needed for kneading)

  • 3 medium potatoes (boiled & mashed)

  • ½ cup green peas (boiled or frozen)

  • 1 tsp cumin seeds

  • 1–2 green chilies (finely chopped)

  • 1 tsp ginger (grated)

  • 1 tsp coriander powder

  • ½ tsp cumin powder

  • ½ tsp garam masala

  • ½ tsp amchur (dry mango powder) or lemon juice

  • Salt to taste

  • 1 tbsp oil

  • Fresh coriander leaves (chopped, optional)

  • Oil for deep frying


👨‍🍳 Step-by-Step Instructions

1️⃣ Prepare the Dough:

  1. In a bowl, mix all-purpose flour, salt, and oil.

  2. Rub the mixture with your fingers until it resembles breadcrumbs.

  3. Add water little by little and knead into a firm, smooth dough.

  4. Cover and rest for 30 minutes.

2️⃣ Prepare the Filling:

  1. Heat oil in a pan.

  2. Add cumin seeds, let them splutter.

  3. Add ginger and green chilies, sauté for a few seconds.

  4. Add green peas and cook for 2–3 minutes.

  5. Add mashed potatoes and mix well.

  6. Add all dry spices and salt.

  7. Cook the mixture for 5 minutes, stirring well.

  8. Add fresh coriander leaves (optional).

  9. Let the mixture cool.

3️⃣ Assemble the Samosas:

  1. Divide the dough into lemon-sized balls.

  2. Roll each ball into an oval or round of about 6-inch diameter.

  3. Cut it in half to make two semi-circles.

  4. Take one semi-circle, apply water on the edge.

  5. Form a cone and press the edge to seal.

  6. Fill with potato mixture and seal the top tightly.

4️⃣ Fry the Samosas:

  1. Heat oil on medium heat (don’t let it get too hot).

  2. Gently slide samosas into the oil and fry until golden brown, turning occasionally.

  3. Remove and drain on paper towels.
