For Bhaji (Vegetable Curry)

2 tbsp butter (plus extra for serving)

1 tbsp oil

1 tsp cumin seeds

1 medium onion, finely chopped

1 tsp ginger-garlic paste

1 green chili, finely chopped (optional)

2 medium tomatoes, finely chopped

2 medium potatoes, boiled and mashed

1 cup cauliflower florets (boiled & mashed)

Step-by-Step Cooking
๐ฅ Making the Bhaji

Heat butter and oil in a pan. Add cumin seeds and let them splutter.

Add chopped onions and sautรฉ until golden.

Add ginger-garlic paste and green chili. Cook for a minute.

Add tomatoes. Cook until soft and oil starts separating.

Add turmeric, chili powder, pav bhaji masala, and salt. Mix well.

Add boiled & mashed vegetables: potatoes, cauliflower, peas, and capsicum.

Mix and mash everything with a potato masher or the back of a spoon.

Add water to adjust the consistency. Let it simmer for 7โ10 minutes.

Add lemon juice and chopped coriander. Mix and turn off the flame.
๐ Toasting the Pav

Slice pav buns in half.

Heat butter on a tawa/pan, sprinkle pav bhaji masala (optional).

Toast the pav buns until golden on both sides.
