For Bhaji (Vegetable Curry)

  • 2 tbsp butter (plus extra for serving)

  • 1 tbsp oil

  • 1 tsp cumin seeds

  • 1 medium onion, finely chopped

  • 1 tsp ginger-garlic paste

  • 1 green chili, finely chopped (optional)

  • 2 medium tomatoes, finely chopped

  • 2 medium potatoes, boiled and mashed

  • 1 cup cauliflower florets (boiled & mashed)

  • 1/2 cup green peas (boiled)

  • 1 small capsicum, finely chopped

  • 1/2 tsp turmeric powder

  • 1 tsp red chili powder

  • 1.5 tbsp pav bhaji masala

  • Salt to taste

  • 1/4 cup water (or more for desired consistency)

  • Fresh coriander leaves, chopped

  • 1/2 lemon for juice

For Pav (Bread Rolls)

  • 4 pav buns (or burger buns)

  • 2 tbsp butter

  • A pinch of pav bhaji masala (optional)

  • Chopped coriander (optional)

For Garnish

  • Butter cubes

  • Chopped onions

  • Lemon wedges

  • Coriander leaves

Step-by-Step Cooking

๐Ÿฅ„ Making the Bhaji

  1. Heat butter and oil in a pan. Add cumin seeds and let them splutter.

  2. Add chopped onions and sautรฉ until golden.

  3. Add ginger-garlic paste and green chili. Cook for a minute.

  4. Add tomatoes. Cook until soft and oil starts separating.

  5. Add turmeric, chili powder, pav bhaji masala, and salt. Mix well.

  6. Add boiled & mashed vegetables: potatoes, cauliflower, peas, and capsicum.

  7. Mix and mash everything with a potato masher or the back of a spoon.

  8. Add water to adjust the consistency. Let it simmer for 7โ€“10 minutes.

  9. Add lemon juice and chopped coriander. Mix and turn off the flame.

๐Ÿž Toasting the Pav

  1. Slice pav buns in half.

  2. Heat butter on a tawa/pan, sprinkle pav bhaji masala (optional).

  3. Toast the pav buns until golden on both sides.
